Seafood Ceviche

refreshing, light and spicySpanish dish I can eat this all day every day.  I learned how to make this from my sister in law.  She was prepping this dish one day I was at her house and I decided to help, it’s so simple and easy, plus you can add and experiment when you make it.


1/2 pound raw shrimp  with shell
2 cucumbers
2 large tomatoes
4 limes
1/2 red onion
2 Serrano chillies
1 bunch cilantro
1 avocado (optional)
salt & pepper
1 package of corn tortillas chips

prep. prep. prep.

Dice, dice, dice… all your veggies  should be diced small and place them all into a large bowl with a lid. Cut the shrimp into small pieces, slice the bunch of cilantro as small as possible. 

Once all are sliced and diced squeeze the 4 limes all over and add a pinch of salt and pepper and toss it well.  Place in the refrigerator overnight and it will be ready to eat the next day.
