Wings on fire

If I could BBQ everyday I would. wingsonfire is a dish we make about 2 times a month,  We normally BBQ over charcoal and finish it with mesquite chips.  But this time we BBQ on a new propane, it’s a little different, but it is still delicious.
So this is what you need for this delicious simple dish.


6 pounds of chicken wings ( get them from the butcher rather then prepacked if possible )
1 whole garlic ( mortar )
4 slices of ginger ( mortar )
1 bottle of oyster sauce 
4  tablespoons of crushed chili peppers, if you don’t like it hot use only 2 tablespoons


Cut the wings with 3 stripes for better cooking and flavoring, once your finished throw them into a clean zip lock bag or grocery bag.  Once that’s done pour in the 4 tablespoons of chili peppers, ginger, garlic and oyster sauce into the bag. Now what your going to do is mix in ingredients into the chicken, don’t use a spoon or a fork. Put on disposable gloves and get your hands into it and rub in all the ingredients for about 5 minutes.  Once your done, get another bag and double bag your chicken so it doesn’t leek.  Put it in the fridge for 4 hours.
4 hours are up, your chicken wings are ready for the grill.  Serve your wings with pippin hot white steamed rice or papaya salad ( recipe to follow soon ! )
